What to Do With Stems of Fresh Herbs

This is more of a suggestion than a recipe, but I thought because of the food content, it belonged here on our site.

 

I love fresh herbs, and I find that most of my clients do as well. What I couldn’t stand was throwing out the stems. It just seemed too wasteful to me. Because I love to cook and create, I came up with several uses for the stems. Here they are:

 

1. Chop them finely, and add them to rice before you cook it.

2. Process them in a mini food processor; add a bit of olive oil and garlic, and you have a wonderful dipping sauce, or something to spread over meats while they cook.

3. Finely chop, and add to salads

4. Chop and add to your favorite veggies while they steam or cook

5. Tie them with string, and add them to soup while it cooks. When the soup is done, just toss them out (or eat them if you choose)

6. Stuff them inside a chicken cavity

 

You get the picture. Using the stems can be just as rewarding as using the leaves. In general, the stems are just not as pretty to look at, but they provide a lovely flavor punch. Good luck, and happy herbing.
