Turkey Vegetable Loaf

Meatloaf is one of those tricky foods. Not because it is hard to make, but because everyone has their own variation of a meatloaf recipe. Here’s the one that I use. It is quick, tastes great, and is healthy as well. The difference in my loaf is that I saute the vegetables before I form my loaf to bake. Enjoy!

Ingredients:

1. 20 oz. 93% lean ground turkey meat

2. 1 bag (10 oz.) of frozen seasoning mix (use the one with onions, peppers, celery)

3. 1/2 cup chopped cilantro or parsley

4. 1/2 cup panko bread crumbs

5. 1 egg + 1 egg white, lightly beaten

6. 1/3 cup grated Parmesan cheese

7. 2 tsp. dried beef bullion

8. 2 tsp. dried garlic, minced, or 2 minced cloves

9. 3 tbsp. ketchup

10. 1 tbsp. olive oil

Directions:

1. Preheat oven to 370 degrees

2. Saute vegetables and garlic in olive oil until soft.

3. Combine all remaining ingredients except 1 tbsp. of ketchup, with your hands. Mix until well mixed.

4. Form into loaf on baking pan, and spread remaining ketchup on top

5. Bake for about an hour, or until thermometer shows internal temperature of 170 degrees.

6. Let sit for about 5 minutes before slicing.
