Spaghetti Squash Pie

Spaghetti Squash Pie

 

This one will fool everyone, while adding hidden vegetables into their meal. It is simply delicious. If you have a favorite spaghetti pie recipe, simply substitute the pasta in your recipe for the squash in mine.

Ingredients:

1 whole spaghetti squash, cooked and peeled

8oz. 93% ground turkey, cooked with Italian spices and drained

1c. cooked chopped spinach, drained

8oz. park skim mozzarella cheese

1c. part skim ricotta cheese

½ cup grated parmesan cheese

2 egg whites

2tbsp. chopped onion

1tbsp. chopped garlic

1tsp. olive oil

¼ cup fresh chopped parsley

Fresh basil leaves for garnish

 

Directions:

1. Cook spaghetti squash:

a. Poke holes in skin of squash

b. Put in microwave for 4 minutes

c. Let cool until you can touch it

d. Cut in half, lengthwise and scoop out seeds. Discard them, or roast them later.

e. Place is shallow baking pan in oven or toaster oven, add 1/4 cup of water, cover with foil and bake at 400 degrees cut side down, for about 45 minutes. Fork should easily pierce skin and go through squash.

f. When cool enough to handle, take fork and run it inside the squash. The “strands” of spaghetti will easily come out. Sautee the garlic and onion is a tsp. of olive oil. When “clear”, add ground turkey, Italian spices, and continue cooking until done and crumbly in texture.

2. Combine 1/2 of the mozzarella cheese, 1/2 of the Parmesan cheese, egg whites, ricotta cheese, salt, pepper, garlic and onion powder to taste (optional) and chopped parsley

3. Spray bottom of casserole pan with non-stick spray

4. Saute the garlic and onion in olive oil until translucent. Add turkey and Italian spices (optional) and continue cooking, crumbling turkey until cooked through.

Now it’s time to start layering: Be sure to evenly spread ingredients.

5. Put 1/4 cup of sauce on bottom of pan

6. Add 1/2 of the spaghetti squash

7. Add 1/4 cup of sauce

8. Add 1/2 of cooked turkey mixture

9. Add 1/2 of the ricotta cheese mixture

10. Add all of the chopped spinach

11. Add 1/4 cup of sauce

12. Repeat steps 6-9

13. Add remaining sauce

14. Add remaining mozzarella cheese

15. Loosely cover with foil that has been sprayed with non-stick cooking spray

16. Bake in preheated 375 oven for 1/2 hour. Uncover and continue baking for about 1/2 hour until cheese is slightly browned and bubbly

17. Sprinkle remaining Parmesan cheese and leaves of basil for garnish before serving
