Homemade Hazelnut Chocolate Spread with Added Protein

Homemade Nutella

I don’t know many people who don’t love “Nutella” brand spread. This is my version of it with added protein. While it does not qualify as a health food, it IS a healthy alternative. This satisfies Pedro’s sweet tooth! You can use whatever nuts you want. Just adjust the nutritional information accordingly.

Ingredients: Makes 25 servings

2/3 cup roasted, unsalted hazelnuts (also called filberts)

1 c. sweetened, condensed milk, separated into 3/4 cup and 1/4 cup

1 scoop chocolate (or unflavored) whey protein powder

3 tbsp. honey

1/2 cup unsweetened chocolate (in chips or very small pieces for melting)

Directions:

1. Roast hazelnuts in a toaster oven or oven at 350 degrees for about 10 minutes. Watch them and turn them to prevent burning.

2. Set nuts aside to cool

3. Melt chocolate, condensed milk and honey. Either use a double boiler method, or use a microwave-safe bowl and heat on low, stirring frequently until melted.

4. Put nuts in a food processor, and process until they become a smooth butter-like consistency.

5. Add melted chocolate mixture and protein powder to processor and continue processing until creamy texture is achieved. You may need to add some more condensed milk to get the right consistency. Add it a tsp. at a time to avoid making it soupy.

6. Put in air-tight jar or container, and keep refrigerated. There are no preservatives, so it must be kept in the fridge for up to a month, but it won’t last that long!
