Greek Egg White Bake

Egg White Bake

Low in calories, high in nutrients and TASTE! Easy to make in your toaster oven, this dish will keep well in the refrigerator for up to 5 days! Just re-heat and eat, or eat cold!

Number of Servings: 4
Ingredients

Ingredients:
egg white, fresh, 12 large (or liquid egg white equivalent)
Spinach, fresh, 1 package (10 oz)
Onions, raw, .5 cup, chopped
Any color Peppers (bell peppers)- 1/2c. chopped
*Athenos Reduced Fat Feta Cheese, 2 oz chopped
I Can’t Believe It’s Not Butter, Light Spread (Soft)2 tbsp.
salt and pepper to taste

 

Directions

I use my toaster oven to make this! Use an 8X8 or 9X5 baking pan sprayed with non-stick cooking spray. Whatever fits best! Preheat oven to 350 degrees. Cut open top of bag of spinach. Add 1tbsp. of water. Put in microwave for 1 min. This will wilt the spinach for you. Saute onion, pepper and spinach in the ICBINB spread. When the onion is soft, transfer ingredients to the baking pan. Add the egg whites and feta cheese and stir, making sure the spinach mixture is even. Bake for about 1/2hr. until top is brown and middle is set.
