Cilantro Lime Chicken

It happens every time I go away for an extended time, to a new country with new flavors and cuisine; I come home with the flavor of the vacation. That being said, here is my take on Costa Rican chicken. Really, it is just a marinade, incorporating the flavors that I experienced on our latest vacation. This marinade is really best as a quick marinade (less than an hour total time), or it begins to “cook” the chicken. Enjoy!

INGREDIENTS:

2lbs. Chicken parts (This recipe is really good with chicken on the bone, but can be made with boneless as well)

Juice + zest of 1 large lime, or 2 small ones

1.5 cups Coarsely chopped cilantro

1tbsp. Chopped, dried garlic

1/2 cup Olive Oil

1/2 cup Water

1/2 tsp. salt

1/2 tsp. ground pepper

Dash of ground cumin

Dash of ground turmeric

DIRECTIONS:

Whisk all ingredients except chicken together.

Pour mixture into plastic “zip top” bag

Add chicken parts and turn bag to coat all pieces

Let bag rest, flatly, in refrigerator for 1/2 hour, flip bag over and continue marinating for additional 1/2 hour

Heat grill to high heat to sear chicken, and drain/discard marinade from bag

Place chicken on grill and “sear” for 7 minutes on each side. Lower heat, flip pieces, and continue cooking until chicken is 165 degrees in center for breasts and 170 degrees in center for dark meat pieces.

NUTRITION INFORMATION:

This is a really difficult thing to calculate due to a few different factors:

1. Which chicken parts you use

2. How much of the marinade actually penetrates the pieces

For those reasons, I cannot tell you the exact nutritional information without losing sleep over the fact that it may be inaccurate. What I can say, however, is that most of the oil in the marinade gets discarded. That being said, you can use the basic nutritional information from whatever chicken parts you choose to use.
