Gorgonzola Tortilla Pizza
You already know I am a fan of tortilla pizza for several reasons:
- The crust is much thinner than traditional pizza, thus it has a lot less calories, fat, etc.
- You can really be creative with ingredients
- You can make several varieties quite easily, which is great when you entertain or just variety at your own table.
- It is just delicious
That being said, all I am doing is suggesting another ingredient to try adding: Gorgonzola cheese.
Why Gorgonzola cheese, you may ask?
I’m glad you asked!
With just a few sprinkles, you add a LOT of flavor. It also melts really well, so the flavor really spreads.
When I use Gorgonzola, I keep it simple:
- Wet tortilla with a spray bottle on both sides (this ensures a really crispy pizza)
- Add a THIN layer of Parmesan cheese (this makes the crust able to withstand heavier ingredients without getting soggy)
- Add fresh basil leaves
- Add garlic (fresh or dried) to taste (I use a LOTTTTTT)
- Add some thinly sliced onion to taste
- Add thinly sliced tomatoes to cover top (if you use dried garlic, it must be covered with tomatoes to soften)
- Add sprinkle of your favorite “melty” cheese (I use mozzarella)
- SPARCELY add Gorgonzola crumbs
- Season with Italian seasoning and parsley flakes or fresh parsley if you have it, salt and pepper
- Bake until desired color is reached (I use a 400 degree oven for about 10 minutes or so)
I am not including nutritional value, because it varies by the size/brand of the tortilla and the types of cheeses you use. The math should be relatively easy, and you can use any of the tools available on-line to determine specific nutritional information.
