Tortilla Pizza
This is a delicious, relatively low-calorie, fast and versatile alternative to pizza parlor pizza. We love it so much, we actually prefer it over any other pizza option. Typically, the large sized tortilla is a meal for one or appetizer for 2. You can make it with any size tortilla, but adjust the calorie count to accommodate. The recipe posted is for the largest size.
Ingredients:
1 Burrito-sized flour tortilla
1/4 cup Parmesan cheese, finely grated
1/2 cup part skim shredded mozzarella cheese
1 diced tomato
1 clove garlic, diced (or to taste)
1/8 cup chopped onion (optional)
1/4 cup fresh basil leaves
Up to 1/2 cup of any other vegetables, cut into 1/2 inch pieces
1 tbsp. olive oil
salt, pepper and crushed red pepper to taste
* Obviously, you can add any of your other favorite toppings. Simply adjust the calories accordingly.
Directions:
1. Preheat oven to 400 degrees (I use my toaster oven)
2. Spread Parmesan cheese in thin even layer on tortilla
3. Sprinkle 1/2 of the cheese on top
4. Add all other vegetables, making sure not to overcrowd the pizza (especially with wet ingredients)
5. Sprinkle remaining cheese on top
6. Drizzle olive oil over top
6. Bake on wire rack for about 10 minutes until the cheese is bubbly and the pizza is done to your likeness
Tips:
I have learned several things through trial and error: The common factor here is avoiding a soggy mess and ending up with a crisp pizza.
1. You MUST spread the cheese layer on the tortilla first to avoid a soggy mess. Do not mess around with the order in the directions.
2. You MUST spread out the wet ingredients to avoid a soggy mess.
3. Do NOT make the pizza too heavy to avoid a soggy mess.
